1/2 cup of brown rice, washed, 5 medium onions, quartered, 2tbsp. melted butter (or olive oil) 2 tbsp. flour, 1 1/3 cup of milk, 1 cup of gtated Cheddar cheese (or some freaky shit if that's your bag) salt and pepper to taste.
Cook the rice until tender. Meanwhile, peel quarter and cook the onions in boiling water, covered until tender; drain. Blend the butter and flour in a bowl, add the milk, stir in the cheese and salt, and cook over boiling water until smooth and thickened, stirring frequently. Arrange the rice, onions, and sauce in layers in a casserole dish. Bake in a moderate oven of 350 degrees F for 30 minutes (uncovering for the last 15). Serve on a plate and eat with a knife and fork.
